Chicken and Roasted Pepper Hummus Bowl



  • 1 Tbsp. Extra virgin olive oil
  • 1 cup Yellow onion, diced
  • 1 pound Boneless skinless chicken breast
  • 1 cup Chopped roasted red bell peppers
  • 2 Tbsp Dried basil
  • 1 Tbsp. Dried thyme
  • 2 Tbsp. Minced garlic
  • 1 (15 ounce) can Tomato sauce
  • 1 (10 ounce) container Sabra classic hummus
  • Salt and black pepper to taste
  • Optional Garnishes: Urfa Biber (Turkish black pepper), paprika, fresh parsley and sesame seeds

  1. Place olive oil in a medium-sized pan. Heat over medium-high heat. Add onion and cook until almost translucent about 4–5 minutes.
  2. Add chicken breast, roasted peppers, basil, thyme, garlic and tomato sauce. Stir until in-gredients are completely coated with sauce.
  3. Simmer 10–15 minutes or until, sauce is hot and chicken is cooked through (165 F. internal temperature).
  4. Spoon one quarter of Sabra Classic Hummus onto each serving bowl. Swirl the hummus, using the back of the spoon, to create a bowl of hummus inside of the serving bowl.
  5. Ladle chicken and roasted pepper mixture into the hummus bowl. Serve warm.
  6. Garnish with optional garnishes, as desired.
