- Preheat oven to 375°F. Pierce potatoes 2 or 3 times with a fork; rub with vegetable oil and place on foil-lined baking sheet. Bake 40 minutes to 1 hour or until tender, turning once after 30 minutes. Remove and let cool 10 minutes.
- Meanwhile, in a large skillet heat oil and 2 tablespoons of the butter over medium heat. Add onion; cook, stirring, 10 minutes or until onion begins to soften. Add sugar, and salt and pepper to taste; continue stirring 10 minutes more or until onions are soft and golden. (If onion starts to stick to pan, reduce heat and stir in 2 tablespoons water.) Set aside.
- While potatoes are still warm but cool enough to handle, cut in half and scoop out potato into a medium bowl. Mash until smooth. Add sage, remaining 3 tablespoons butter, and salt and pepper to taste. Mash until well-mixed.
- Spoon mashed potatoes into a serving bowl and top with onions. Serve warm.
