- Preheat grill to medium-low (275°F to 300°F). Brush bread slices with 2 tablespoons of the olive oil. Lightly toast both sides of bread slices about 2 minutes per side.
- Combine tomatoes, bell pepper, remaining 1 tablespoon olive oil, basil and garlic.
- Spoon tomato mixture onto toast, sprinkle with cheese, and serve.
