Ingredients

  • 2 green onions, thinly sliced
  • 1 clove garlic, chopped
  • 2 tbsp. olive oil, divided
  • 3 Roma tomatoes, chopped
  • 1 1/2 tsp. chopped jalapeño or serrano pepper*
  • 1/2 cup small cooked shrimp, peeled and deveined, thawed if frozen
  • 4 haddock fillets
  • Hot cooked couscous (optional)
  • 1/2 to 3/4 cup tomato juice

  1. Preheat grill to medium (300°F to 350°F). In saucepan cook onions and garlic in 1 tablespoon of the oil. Stir in tomatoes, tomato juice and jalapeño; simmer 10 minutes. Stir in shrimp; simmer 5 minutes to heat through. Remove from heat; cover and set aside.
  2. Brush fish on both sides with remaining oil, and season with salt and pepper to taste. Grill 4 minutes per side or until fish flakes easily with a fork.
  3. Arrange fillets on serving plate and top with shrimp sauce. Serve with couscous, if desired.
