Ingredients

  • 4 medium sweet potatoes, peeled, cut into 1-inch pieces (1 1/2 lbs.)
  • 3 medium parsnips, peeled, cut into 1-inch pieces (1 lb.)
  • 3 medium turnips, peeled, nd cut into 1-inch pieces (1 1/2 lbs.)
  • 1 tbsp. olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 tbsp. honey
  • 1/2 tsp. freshly grated lemon peel
  • 1 tbsp. fresh lemon juice

  1. Preheat oven to 400°F. Coat a large baking pan with nonstick cooking spray. Add potatoes, parsnips and turnips to pan. Drizzle with oil and season with salt and pepper; toss to coat.
  2. Place pan in oven. Roast, uncovered, 45 to 50 minutes, stirring once, until vegetables are tender and lightly browned.
  3. In a small bowl combine honey, lemon peel and lemon juice; mix well. Drizzle over roasted vegetables; toss, and serve.
