- Heat oil in a large nonstick skillet over medium heat. Add chicken, garlic and shallots; cook, stirring, 5 minutes or until chicken is no longer pink.
- Stir in tomatoes, Parmesan and pepperoni. Simmer, covered, 20 minutes, stirring occasionally.
- Add spinach and basil; simmer, covered, 10 minutes, stirring occasionally. Sprinkle with mozzarella (if desired), spoon over rice, and serve.
