Loaded Potato Skins

Ingredients

  • 8 Russet potatoes
  • 2 tbsp Butter
  • 2 cups Cheddar cheese, shredded
  • 6 slices Bacon, cooked and chopped
  • 1 cup Sour cream
  • 1/4 cup Green onion, chopped
  • Salt and pepper, to taste

  1. Preheat oven to 400 degrees and bake potatoes for an hour. Allow to cool until touchable.
  2. Halve potatoes lengthwise. Scoop out pulp and discard.
  3. Fill each potato "divot" with cheese and bacon. Use oven broiler to melt cheese.
  4. Garnish with sour cream and green onions.
