Ingredients

  • 2 tsp. toasted sesame oil
  • 2 cups sliced fresh snow peas
  • 1 cup thinly sliced carrots
  • 1 cup sliced mushrooms
  • 1/2 cup green onion, thinly sliced, divided
  • 1 tbsp. light soy sauce
  • 8 oz. rice noodles or other Asian noodles (2 cups), cooked
  • Sesame seeds (optional)

  1. Coat a nonstick wok or skillet with sesame oil. Place over high heat 1 minute.
  2. Add snow peas, carrots, mushrooms and 1/4 cup of the green onion. Stir-fry over high heat until vegetables are crisp-tender.
  3. Add soy sauce and cooked noodles. Toss 1 to 2 minutes or until heated. Top with remaining 1/4 cup green onion. Sprinkle with sesame seeds, if desired. Serve immediately.
