Ingredients

  • 2 (4.5-oz.) cans diced green chiles, drained
  • 1 (15.25-oz.) can sweet corn, drained
  • 1 cup shredded Monterey Jack (4 oz.)
  • 1/2 cup grated Parmesan (2 oz.)
  • 1/2 cup chopped red bell pepper
  • 1/2 cup light mayonnaise
  • 1 jalapeño pepper, seeded and finely chopped*
  • Tortilla chips for serving

  1. Preheat oven to 350°F. In a large bowl stir together green chiles, corn, cheeses, bell pepper, mayonnaise and jalapeño. Season with salt and pepper to taste. Transfer mixture to a 2-quart rectangular baking dish. Cover and bake 20 minutes or until bubbly. Serve warm with tortilla chips.
