Strip Steaks Chimichurri with Red Peppers

Ingredients

  • 1/3 cup olive oil
  • 4 tsp. white wine vinegar
  • 3 tbsp. chopped fresh parsley
  • 1/2 tsp. dried oregano
  • 3 large cloves garlic, minced
  • 1/2 tsp. salt
  • 1/4 tsp. cayenne pepper
  • 4 beef loin strip steaks, about 1 inch thick
  • 1 tsp. garlic pepper
  • 2 red bell peppers, halved and seeded

  1. For chimichurri, whisk together olive oil, vinegar, parsley, oregano, garlic, salt and cayenne pepper in small bowl. Set aside.
  2. Heat grill to direct medium-high heat. Sprinkle steaks evenly with garlic pepper. Spray bell peppers lightly with nonstick cooking spray on skin side, if desired. Place steaks on grill. Grill, covered, 4 to 7 minutes per side to desired doneness
  3. Meanwhile, grill red bell peppers, skin side down, 5 to 10 minutes or until tender.
  4. Cut peppers into strips. Serve steak and peppers with reserved chimichurri
