T-Bone over Bacon-Spinach Mashed Potatoes

Ingredients

  • 4 bacon slices, diced
  • 2 lbs. russet potatoes, peeled, cut into 1-1/2- inch chunks
  • 2 garlic cloves, peeled
  • 1 (9-oz.) pkg. fresh spinach
  • 1/2 cup heavy cream
  • 2 tbsp. butter
  • 4 T-bone steaks, 1 1/2-inch thick
  • 1/2 tsp. kosher salt
  • 1/4 tsp. freshly ground pepper
  • 2 garlic cloves, minced
  • 2 tbsp. olive oil

  1. In a small skillet cook bacon over medium-high heat until crisp. Drain on paper towels; set aside.
  2. In a large pot of salted boiling water cook potatoes and garlic 15 minutes or until tender. Stir in spinach to wilt. Drain potatoes, garlic and spinach; return to pot. Cook over low heat, stirring occasionally, 1 to 2 minutes or until excess moisture evaporates.
  3. Add cream, butter and cooked bacon to pot. Mash potatoes with a potato masher; season with salt to taste. Cover and keep warm.
  4. Sprinkle steaks with salt, pepper and minced garlic; drizzle with oil. Heat a heavy grill pan or cast-iron skillet over medium-high heat until slightly smoking. Add steaks; cook 5 to 10 minutes per side (145°F for medium-rare) or to desired doneness. Remove and let stand 5 minutes. Serve over bacon-spinach mashed potatoes.
