What do I need to know to roast a turkey properly?

“Well, first off, knowing how many guest you’ll have at the table will help you determine the size of the bird, and if you are like my family, you’ll want to add a “few guests” for those leftovers (or not)!  Below is the estimated time for thawing and roasting a turkey, of course you may need to adjust, depending on your individual circumstances, but this should help you to narrow it down.  It is imperative that the internal temperature of your turkey is 165° F – use a thermometer.  If you don’t have a thermometer, the “juices” should run clear and the leg should “wiggle” freely!”

Tip:  Consider roasting two smaller turkeys side by side to reduce your cooking and thawing times!
