Sausage and Riced Veggies Casserole

  • 2 Tbsp olive oil
  • 1 lb Italian sausage, crumbled or sliced
  • 4 oz. diced onion
  • 16 oz. Riced Cauliflower
  • 1 1/2 cups kale, thinly sliced
  • 1/4 cup goat cheese, crumbled
  • Salt & Pepper to taste


  1. In a skillet over medium high heat, add the olive oil and Italian sausage. Cook for 5 minutes.
  2. Add the diced onions into the pan sautéing them with the Italian sausage for another 5 minutes or until the sausage is cooked through.
  3. Add the riced veggies and kale, cooking for another 5 minutes or until the kale is tender and the riced veggies are warmed through.
  4. Add salt & pepper to taste.
  5. Sprinkle with crumbled goat cheese, serve and enjoy!
