Ingredients

  • 2 tbsp. olive oil
  • 1/2 cup minced onion
  • 2 garlic cloves, minced
  • 1 lb. extra-lean ground beef
  • 1 red bell pepper, seeded and finely diced
  • 1 green bell pepper, seeded and finely diced
  • 1 tbsp. Montreal steak seasoning
  • 1 cup tomato sauce
  • 1/2 cup barbecue sauce
  • 1 tbsp. red wine vinegar
  • 1/2 (16-oz.) pkg. rigatoni
  • 1/2 cup shredded smoked Cheddar
  • 3 bacon slices, cooked crisp, crumbled
  • 1 tomato, diced

  1. In a large skillet heat oil over medium-high heat. Add onion and garlic; sauté until translucent. Add ground beef; cook and stir until crumbled and no longer pink. Add bell peppers and steak seasoning; cook and stir 5 minutes or until peppers soften.
  2. Stir in tomato sauce, barbecue sauce and vinegar. Reduce heat; simmer 10 minutes, stirring occasionally.
  3. Meanwhile, cook pasta al dente according to package directions; drain. Add pasta to skillet, mixing well to coat with sauce.
  4. Spoon pasta into 6 soup bowls or plates. Sprinkle with cheese, bacon and diced tomato, and serve.
