Ingredients

  • 4 tuna steaks, 3/4-inch thick
  • 1 tbsp. olive oil
  • 1/2 sweet onion, diced
  • 1 garlic clove, minced
  • 2 plum tomatoes, diced
  • 2 tbsp. orange marmalade
  • 4 tbsp. balsamic vinegar

  1. Preheat oven to 450°F. Coat a baking dish with nonstick cooking spray. Place tuna in baking dish. Bake 6 to 8 minutes or until fish flakes easily with a fork.
  2. Meanwhile, for salsa, in a medium skillet heat oil over medium-high heat. Add onion and garlic; cook 1 minute. Add tomatoes; stir in marmalade and vinegar.
  3. Spoon salsa over tuna, and serve.
