Ingredients

  • 1/2 cup balsamic vinegar
  • 3 tbsp. olive oil
  • 3 garlic cloves, chopped
  • 1/2 cup chopped fresh Italian (flat-leaf) parsley
  • 2 tbsp. chopped fresh oregano
  • 1/4 tsp. crushed red pepper flakes
  • 1 (1 1/2-lb.) London broil (top round steak)

  1. For the marinade, in a small bowl whisk together vinegar, oil, garlic, parsley, oregano, red pepper flakes, and salt to taste. Place steak in a large resealable plastic bag; pour marinade over steak. Seal bag; turn to coat. Refrigerate at least 2 hours.
  2. Preheat grill to medium (300°F to 350°F). Remove steak from marinade; reserve marinade. Grill steak, covered, 10 to 12 minutes per side (145°F) or to desired doneness. Let stand 3 minutes.
  3. Meanwhile, pour reserved marinade into a small saucepan. Bring to boiling; cook 1 minute more, stirring occasionally. Thinly slice steak diagonally against the grain. Spoon sauce on steak, and serve.
