Ingredients

  • 1 pt. raspberries
  • 1 pt. blackberries
  • 1 pt. blueberries
  • 1 pt. strawberries, hulled and halved
  • 2 tsp. finely grated lemon zest
  • 2 to 3 tbsp. fresh lemon juice
  • 1/4 cup sugar
  • Vanilla ice cream or frozen yogurt
  • Fresh mint leaves

  1. Preheat grill to medium-high (350°F to 400°F). In a medium bowl combine berries, lemon zest, lemon juice, sugar and a pinch of salt; toss to combine. Transfer to a 9x13-inch sheet of heavy-duty foil. Fold up the sides to form a packet. Crimp and tightly seal edges.
  2. Place foil packet on grill. Grill 10 minutes or until berries release their juice. Remove from grill.
  3. Spoon ice cream into individual dessert dishes; top with warm berry sauce and mint, and serve.
