Ingredients

  • 1/2 cup vegetable oil
  • 1/2 cup cider vinegar
  • 1/2 cup sugar
  • 2 garlic cloves, minced
  • 1 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1 (15.25-oz.) can black beans, rinsed and drained
  • 1 (15-oz.) can white hominy, drained
  • 4 green onions, thinly sliced
  • 1 small onion, finely chopped
  • 2 tomatoes, seeded and chopped
  • 1 small green bell pepper, seeded and chopped
  • 1/2 cup chopped celery
  • Tortilla chips

  1. For the dressing, in a small saucepan combine oil, vinegar, sugar, garlic, salt and pepper. Bring to boiling; cook and stir until sugar dissolves. Remove from heat and set aside.
  2. In a medium bowl combine black beans, hominy, green onions, onion, tomatoes, bell pepper and celery. Add dressing; stir gently.
  3. Cover and refrigerate at least 2 hours before serving. Serve with tortilla chips.
