Ingredients

  • 2 tbsp. chili sauce
  • 2 tbsp. ketchup
  • 4 tbsp. fresh lemon juice, divided
  • 1/4 tsp. hot sauce
  • 4 catfish or tilapia fillets
  • 1/2 tsp. lemon pepper
  • 1/4 tsp. salt
  • 4 bacon slices, cooked
  • 4 lettuce leaves
  • 1 to 2 tomatoes, thinly sliced
  • 4 red onion slices (optional)
  • 4 slices white or whole-wheat bread

  1. For the sauce, in a small bowl combine chili sauce, ketchup, 2 tablespoons of the lemon juice, and hot sauce; set aside.
  2. Coat grill rack with nonstick cooking spray. Preheat grill to medium-high (350°F to 400°F). Drizzle remaining 2 tablespoons lemon juice over catfish, and sprinkle with lemon pepper and salt. Place fillets on grill. Grill, covered, 5 to 7 minutes per side or until fish flakes easily with a fork.
  3. Arrange catfish, bacon, lettuce, tomatoes and (if desired) onion on each of 2 bread slices. Spread the remaining 2 slices with sauce, and place on top. Serve immediately.
