Blueberry Pancakes with Florida OJ

Ingredients

  • FOR THE PANCAKES:
  • 1 1/4 cups Florida Orange Juice
  • 1 cup Unbleached all purpose flour
  • 2 tsp. Baking powder
  • 3/4 tsp. Salt
  • 1/4 tsp. Ground nutmeg
  • 2 Eggs, beaten
  • 1 cup Blueberries, optional
  • 1 1/4 cup Whole wheat pastry flour
  • 1 Tbsp. Sugar
  • 1/2 tsp. Baking Soda
  • 1/4 tsp. Ground cinnamon
  • Pinch Ground cardamom
  • 1 1/4 cups Non-fat buttermilk
  • Non-stick spray
  • FOR THE FLORIDA OJ MAPLE SYRUP:
  • 1/4 cup Florida Orange Juice
  • 1/2 cup Maple syrup

Directions

  1. MAKE PANCAKE MIX:
  2. Place the flours, sugar, baking powder, baking soda, salt, cinnamon, nutmeg and cardamom into a large mixing bowl and whisk to combine.
  3. Place the Florida Orange Juice, eggs and buttermilk in a medium mixing bowl and whisk to combine. Add the liquid to the dry mixture and stir together with a spatula just until combined. There should still be lumps. Do not overmix. Fold in the blueberries.
  4. MAKE SYRUP:
  5. Pour Florida Orange Juice and maple syrup into a small mixing bowl and whisk to combine. Pour into a dispenser.
  6. COOK PANCAKES:
  7. Spray an electric griddle or skillet with non-stick spray and set over medium-high heat.
  8. Once the pan is hot, scoop 1/4 cup of batter into the pan and cook until bubbles form around the edges and the pancake is golden brown, 3 to 4 minutes. Flip and cook on the other side until golden, 2 to 3 minutes. Transfer to an ovenproof plate and keep warm in the oven. Repeat until all the batter is cooked.
  9. Serve with Florida OJ maple syrup.
