Ingredients

  • 1 large bok choy (about 2 lbs.), cored
  • 3/4 lb. chicken breast tenderloins
  • 1/2 tsp. salt-free garlic?herb seasoning, divided
  • 4 tsp. olive oil, divided
  • 1 medium red bell pepper, seeded, cut into bite-size strips
  • 1 small onion, halved lengthwise and sliced
  • 2 garlic cloves, minced
  • 1/2 cup matchstick carrots
  • 1/2 tsp. crushed red pepper flakes
  • 1/2 tsp. sesame oil

  1. Cut the white portion of bok choy into thin slices; set aside. Cut the darker, leafy portion into slices; set aside. Sprinkle chicken with 1/4 teaspoon of the garlic?herb seasoning.
  2. In a large nonstick skillet heat 2 teaspoons of the olive oil over medium-high heat. Add chicken; cover and cook 5 minutes, stirring once. Push chicken to the pan edge.
  3. Drizzle remaining 2 teaspoons olive oil into the center of pan. Add white bok choy slices, bell pepper, onion and garlic; stir-fry 1 minute. Add carrots, darker bok choy slices, red pepper flakes, remaining teaspoon garlic?herb seasoning, and sesame oil; stir-fry 2 to 3 minutes. Serve warm.
