Ingredients

  • 1 1/2 lbs. boneless English roast, cut into 3/4-inch cubes
  • 1 onion, chopped
  • 3 tbsp. less-sodium soy sauce
  • 2 tbsp. hoisin sauce
  • 1 tbsp. peeled, grated gingerroot
  • 3 garlic cloves, minced
  • 1 1/2 cups low-sodium beef broth
  • 2 (4-oz.) pkgs. shiitake mushrooms, thinly sliced
  • 2 tbsp. cornstarch
  • Cooked brown rice (optional)
  • 2 green onions, thinly sliced

  1. In a large bowl combine beef, onion, soy sauce, hoisin sauce, ginger and garlic. Cover and refrigerate 8 hours.
  2. Transfer beef mixture to a slow cooker; stir in broth. Cook on LOW 10 hours or until beef is tender.
  3. Increase heat to HIGH. Stir in mushrooms. In a small bowl combine cornstarch with 2 tablespoons water; stir into slow cooker. Cook 15 to 20 minutes or until thickened. Serve over rice (if desired) and top with green onions.
