Ingredients

  • 8 (10-inch) flour tortillas
  • 8 ready-to-serve pork sausage links, sliced
  • 1/2 (30-oz.) pkg. frozen country-style hash browns, thawed*
  • 1 green or red bell pepper, chopped
  • 1 small onion, chopped
  • 2 tbsp. vegetable oil
  • 12 eggs, lightly beaten
  • 2 cups shredded reduced-fat sharp Cheddar (8 oz.)
  • 1 large tomato, chopped

  1. Preheat oven to 350°F. Wrap tortillas in foil. Wrap sausage in foil. Bake both foil packets 10 to 15 minutes or until heated through. Keep covered; set aside.
  2. Meanwhile, in a large skillet cook potatoes according to package directions. Keep covered; set aside. In the same skillet heat oil over medium-high heat. Add bell pepper and onion; cook until tender. Reduce heat; stir in eggs. Cook until eggs are cooked through but still moist, stirring occasionally. Season with salt and pepper to taste.
  3. Place a small amount of the potatoes, scrambled eggs and sausage on one end of each tortilla, divided evenly. Top with cheese and tomato, then fold in tortilla ends and roll up. Serve warm.
