Caramel Apple Cake

Ingredients

  • 2 cups flour
  • 2 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 3/4 tsp. grated nutmeg
  • 1/2 tsp. salt
  • 1/2 cup plus 2/3 cup butter, softened and divided
  • 2 cups granulated sugar
  • 2 eggs
  • 5 medium apples, peeled and finely chopped
  • 2 cups packed brown sugar
  • 1 cup half-and-half or light cream

  1. Preheat oven to 350°F. Grease a 13x9x2-inch baking pan; set aside. In a medium bowl stir together flour, baking soda, cinnamon, nutmeg and salt. Set aside.
  2. In a large bowl beat granulated sugar and 1/2 cup butter with an electric mixer on medium speed until fluffy. Add eggs; beat until smooth. Add flour mixture, a little at a time, beating after each addition until combined. Fold in apples (batter will be stiff).
  3. Transfer batter to prepared pan. Bake 40 to 45 minutes or until a toothpick inserted near center comes out clean. Cool slightly in pan on a wire rack. Cut into squares.
  4. Meanwhile, in a medium saucepan cook and stir brown sugar, cream and remaining butter over medium heat just until sugar dissolves. Spoon over cake squares, and serve warm.
