Ingredients

  • 1 bottle red wine vinaigrette dressing
  • 1 jar roasted peppers, drained
  • 1 round focaccia
  • 1 log goat cheese, crumbled*
  • 2 cups chopped rotisserie chicken
  • 1 1/2 cups mixed salad greens
  • 3 plum tomatoes, sliced

  1. Preheat oven to 375°F. Blend dressing and roasted peppers in blender or food processor until smooth.
  2. With a serrated knife, cut focaccia through the center into 2 rounds. Place focaccia rounds, cut side up, on a baking sheet. Drizzle evenly with 1/2 cup of pepper-dressing mixture; sprinkle with cheese. Bake 10 minutes or until lightly browned.
  3. Sprinkle chicken on one focaccia round. Top with greens and tomatoes; cover with the other round. Cut into 4 wedges and serve immediately with remaining pepper-dressing mixture.
