Ingredients

  • 1 tbsp. olive oil
  • 1/2 cup sliced green onions
  • 1 large garlic clove, minced
  • 1 cup quartered cherry tomatoes
  • 6 large eggs, beaten
  • 1 cup diced rotisserie chicken
  • 1/4 cup canned green chiles
  • 1/2 cup shredded Mexican cheese blend

  1. In a 10-inch broiler-proof skillet heat oil over medium heat. Add green onions and garlic; cook 1 to 2 minutes until onion is tender. Add tomatoes.
  2. In a medium bowl whisk together eggs, chicken and chiles. Pour into skillet. As egg mixture sets, lift edges to let uncooked mixture to run underneath. Continue cooking until almost set.
  3. Preheat broiler. Place skillet under broiler about 5 inches from heat. Broil about 2 minutes or until set. Sprinkle with cheese and broil 2 minutes more. Cut into wedges, and serve.
