Ingredients

  • 1 1/2 lb. ground beef
  • 1 medium onion, chopped
  • 1 small green or red bell pepper, chopped
  • 1 (1.25-oz.) pkg. chili seasoning
  • 1 tsp. garlic powder
  • 1 (12-oz.) pkg. small egg noodles
  • 1 (10.75-oz.) can reduced-sodium tomato soup
  • 1 (10.75-oz.) can low-sodium cream of mushroom soup
  • 2 cups shredded mild Cheddar

  1. In a large skillet cook beef, onion and bell pepper over medium-high heat until beef is browned and vegetables are tender. Drain fat. Stir in chili seasoning and garlic powder. Season with salt and pepper to taste. Spread meat mixture evenly in skillet; top with noodles. Pour 1 3/4 cups water over noodles.
  2. In a medium bowl stir together tomato soup and mushroom soup; pour over noodles. Bring to boiling. Boil 1 minute; reduce heat. Cover and simmer about 25 minutes or until noodles are tender.
  3. Uncover skillet. Toss beef mixture to combine, then sprinkle with cheese. Cover and cook 2 to 3 minutes more or until cheese is melted. Serve warm.
