- Preheat oven to 325°F. Lightly coat a small roasting pan with nonstick cooking spray. In a small bowl combine 3 tablespoons of the brown sugar blend, 1 teaspoon of the coriander, 1?2 teaspoon of the cinnamon plus onion powder and paprika. Stir in 1 tablespoon of the oil. Rub mixture evenly on pork. Place pork in pan.
- Roast 35 to 40 minutes or until an instant-read thermometer registers 145°F or to desired doneness. Remove pork from pan; loosely cover with foil and let stand 5 minutes.
- Meanwhile, in a medium nonstick skillet heat remaining 1 teaspoon oil over medium heat. Add shallot; cook and stir 1 to 2 minutes. Add plums, orange zest and remaining 2 tablespoons brown sugar blend, 1?4 teaspoon coriander and 1?2 teaspoon cinnamon; cook and stir 2 to 3 minutes. Add broth; bring to boiling. Cook 5 to 7 minutes or until plums are softened and sauce thickens.
- Thinly slice pork and transfer to a platter. Top with plums, and serve.
