Ingredients

  • 1 1/2 lbs. sweet potatoes, peeled and cut into wedges (about 3 large potatoes)
  • 3/4 lb. turnips, peeled and cut into wedges (about 3 turnips)
  • 1 medium onion, thinly sliced
  • 3 tbsp. olive oil
  • 1 tsp. freshly grated lemon peel
  • 1 tsp. freshly grated orange peel
  • 1/2 tsp. dried rosemary

  1. Preheat oven to 450ÂF. In a large resealable plastic bag or large bowl combine sweet potatoes, turnips, onion and oil; toss to coat. Transfer to a 13x9x2-inch baking dish; season with salt and pepper to taste.
  2. Bake 20 minutes or until vegetables are tender, stirring once halfway through cooking time.
  3. Add lemon peel, orange peel and rosemary to baking dish; stir to combine. Bake 5 minutes more. Serve hot or warm.
