Ingredients

  • Dressing:
  • 4 tsp. grapeseed oil
  • 1 tsp. grated lime zest
  • 1 tbsp. fresh lime juice
  • 1 tsp. finely chopped seeded jalapeño (optional)?
  • 1 tsp. sugar
  • 1/8 tsp. salt
  • Salad:
  • 5 cups thinly sliced Chinese cabbage
  • 1/4 cup snow peas, halved crosswise (about 1 cup)
  • 1/3 cup sliced green onions
  • 1/3 cup chopped red bell pepper
  • 1 navel orange, peeled and sectioned

  1. For the dressing, in a small bowl whisk together oil, lime juice, lime zest, jalapeño (if desired), sugar and salt; set aside.
  2. In a large bowl combine cabbage, snow peas, green onions, bell pepper and orange sections; toss to mix well. Drizzle with dressing; toss to coat. Serve immediately, or cover and refrigerate 1 hour before serving.
