Ingredients

  • 4 (5- to 6-oz.) boneless, skinless chicken breasts
  • 1 egg, beaten
  • 3/4 cup Italian breadcrumbs or panko
  • 1/4 cup finely ground walnuts or almonds
  • 2 tsp. dried parsley flakes

  1. Preheat oven to 350°F. Rinse chicken and pat dry with paper towels. Season with salt and pepper to taste; set aside.
  2. Place egg in a shallow dish. In a separate shallow dish combine breadcrumbs, nuts, parsley, and salt and pepper to taste.
  3. Place 1 chicken breast in egg; turn to coat. Place in breadcrumb mixture; turn to coat evenly on all sides. Place in a baking dish. Repeat with remaining chicken.
  4. Cover baking dish with foil. Bake 30 minutes. Uncover and bake 15 minutes more or until an instant-read thermometer inserted into the center of the chicken registers 165°F.
