Ingredients

  • 1/4 cup cornflake crumbs
  • 1/4 cup panko breadcrumbs
  • 2 tsp. chopped fresh dill
  • 2 tsp. chopped fresh chives
  • 1 large garlic clove, minced
  • 2 tbsp. light butter, melted
  • 4 (4-oz.) haddock fillets

  1. Preheat oven to 425°F. In a shallow dish combine cornflake crumbs, panko, dill, chives, garlic, and pepper to taste; mix well. Set aside.
  2. Pour butter into an 11x7-inch baking dish. Dip one side of each fillet in butter, then press buttered side into crumb mixture. Return fillets to baking dish, coated side up.
  3. Bake 10 to 15 minutes or until fish flakes easily with a fork. Serve warm.
