Ingredients

  • 2 English cucumbers, peeled and thinly sliced
  • 1 pt. cherry tomatoes or grape tomatoes, halved
  • 1 small green bell pepper, seeded and chopped
  • 1 medium sweet onion, chopped
  • 1/3 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 2 tbsp. capers
  • 2 tsp. Italian seasoning or herbes de Provence?

  1. For the salad, in a medium bowl toss together cucumbers, tomatoes, bell pepper and onion. Set aside.
  2. For the dressing, in another medium bowl whisk together oil, vinegar, capers and Italian seasoning. Drizzle over salad, toss to coat, and serve.
