- Reserve 3/4 cup of the strawberries. In a small bowl combine sugar, orange zest, orange juice and mint. Add remaining strawberries; mix well. Let stand 10 minutes.
- For the batter, in a medium bowl combine reserved 3/4 cup strawberries and pancake mix; toss to coat. Add water according to package directions; stir until moistened. Let stand 5 minutes.
- Coat a griddle or skillet with nonstick cooking spray. For each pancake, pour 1/4 cup batter onto griddle. Cook until the top bubbles and edges are set. Turn and cook 1 to 2 minutes more or until golden.
- Top pancakes with strawberry mixture, and (if desired) serve with toppings.
