Double Strawberry Buttermilk Pancakes

Ingredients

  • 1 qt. strawberries, hulled and chopped, divided
  • 3 tbsp. granulated sugar
  • 1 1/2 tsp. grated orange zest
  • 1/3 cup fresh orange juice
  • 1 tbsp. chopped fresh mint
  • 2 cups complete buttermilk pancake mix
  • Toppings: Maple syrup, butter, powdered sugar (optional)

  1. Reserve 3/4 cup of the strawberries. In a small bowl combine sugar, orange zest, orange juice and mint. Add remaining strawberries; mix well. Let stand 10 minutes.
  2. For the batter, in a medium bowl combine reserved 3/4 cup strawberries and pancake mix; toss to coat. Add water according to package directions; stir until moistened. Let stand 5 minutes.
  3. Coat a griddle or skillet with nonstick cooking spray. For each pancake, pour 1/4 cup batter onto griddle. Cook until the top bubbles and edges are set. Turn and cook 1 to 2 minutes more or until golden.
  4. Top pancakes with strawberry mixture, and (if desired) serve with toppings.
