Easy Taco Salad

Ingredients

  • 1 lb. ground chuck
  • 1 envelope taco seasoning
  • 7 cups shredded lettuce or pkg. assorted salad greens
  • 1 large tomato, cored and chopped
  • 1/2 medium avocado
  • 3/4 cup shredded Mexican-style cheese
  • Salsa, black olives, chopped onion, sour cream (optional)

  1. In medium skillet over medium-high heat, cook and stir ground beef 6 to 7 minutes or until no longer pink; drain. Stir in taco seasoning and water according to package directions. Simmer over medium-low heat 1 to 2 minutes or until thickened.
  2. Meanwhile, layer lettuce on serving platter. Top with tomato. Peel and pit avocado; cut into cubes or thin wedges and place on lettuce.
  3. Spoon beef mixture onto vegetables; top with cheese. Serve with salsa, olives, onions and sour cream, if desired.
