Ingredients

  • 1 (16-oz.) pkg. dried medium shell pasta
  • 2 cups chopped deli-prepared rotisserie chicken
  • 1 tsp. lemon pepper
  • 2 cups sliced fresh mushrooms
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 3 green onions, sliced
  • 1 to 2 (2.25-oz.) cans sliced ripe olives, drained
  • 1 (4-oz.) pkg. crumbled feta
  • 1 (16-oz.) bottle Italian salad dressing

  1. In a large saucepan cook pasta al dente according to package directions. Drain. Rinse pasta with cold water to cool completely; drain again. Transfer pasta to a very large bowl; sprinkle with lemon pepper. Set aside.
  2. Add chicken, mushrooms, bell peppers, green onions, olives and feta to pasta mixture. Season with salt and pepper to taste. Pour dressing over pasta mixture; toss gently to coat. Cover and refrigerate at least 1 hour before serving.
