- In a small bowl mix together yogurt, lemon peel, lemon juice and 2 tablespoons of the brown sugar, stirring until sugar is dissolved.
- Separate orange sections; cut sections into bite-size pieces. Place in a medium bowl. Add remaining 2 tablespoons brown sugar plus star fruit, pineapple, strawberries and blueberries; toss gently.
- Layer one-third of the star fruit, pineapple, strawberries and blueberries evenly in 8 parfait glasses. Top with one-third of the yogurt mixture. Repeat layers twice with remaining fruit and yogurt. Top with additional lemon peel, blueberries and strawberries (if desired), and serve.
