Ingredients

  • 2 star fruit (carambola), divided
  • 1/2 cup diced mango
  • 1/4 cup sliced green onion
  • 1/4 cup diced red bell pepper
  • 1 jalapeño pepper, seeded and diced*
  • 1 tbsp. fresh lime juice
  • 1/4 cup fresh breadcrumbs
  • 1/4 cup finely chopped pecans
  • 1/2 tsp. ground ginger
  • 1/2 tsp. seasoned salt
  • 1/4 tsp. lemon pepper
  • 1/4 cup milk
  • 4 skinless grouper fillets

  1. For salsa: Dice 1 star fruit; combine with mango, green onion, bell pepper, jalapeño and lime juice in a small bowl; set aside.
  2. Preheat oven to 400°F. Coat a shallow baking pan with nonstick cooking spray. In a shallow dish combine breadcrumbs, pecans, ginger, salt and lemon pepper. Place milk in another shallow dish. Dip 1 fillet in milk, then coat evenly with pecan mixture. Repeat with remaining fillets.
  3. Place fillets in baking pan in a single layer. Bake 12 minutes or until fish flakes easily with a fork.
  4. Slice remaining star fruit. Serve grouper with star fruit salsa and slices.
