Ingredients

  • 1 lb. chicken breast, cooked, cut into strips, or 2 (8-oz.) pkg. grilled chicken strips
  • 3 medium tomatoes, cut into wedges
  • 1 1/2 cups thinly sliced cucumber
  • 1 small purple onion, thinly sliced
  • 1/2 cup sliced black olives
  • 1/3 cup light balsamic vinaigrette
  • 4 cups torn romaine lettuce or baby spinach leaves
  • 1 cup coarsely crumbled feta cheese

  1. Combine chicken, tomatoes, cucumber, onion and olives in large bowl. Add vinaigrette; toss to coat. Cover and refrigerate until chilled, at least 1 hour.
  2. Place romaine leaves on a large serving platter or 4 plates. Top with chicken salad, sprinkle with feta, and serve.
