Ingredients

  • 2 large apples, cut into 3/4-inch wedges
  • 1 small red onion, cut into 3/4-inch slices
  • 1 tbsp. olive oil
  • 8 bacon slices
  • 8 cups baby spinach leaves
  • 3 Roma tomatoes, cut into chunks
  • 4 tbsp. unsalted toasted almonds
  • Chunky blue cheese dressing or creamy ranch dressing

  1. Preheat grill to medium (300F to 350F). Brush apple wedges and onion slices with oil. Place bacon slices, apple and onion on grill. Grill 5 to 7 minutes or until apples are crisp-tender and bacon is crisp, turning once. Cut onion into bite-size pieces.
  2. Place 2 cups spinach on each of 4 plates. Top evenly with apple, onion and tomato; crumble 2 bacon slices on each salad and sprinkle with 1 tablespoon almonds. Drizzle with dressing, and serve.
