Grilled Corn in the Husk with Chipotle Butter

Ingredients

  • 4 ears corn on the cob in the husk
  • 1/3 cup softened butter
  • 1 small chipotle chile in adobo sauce, chopped, with 1/2 tsp. of the sauce
  • 1 tbsp. chopped cilantro

  1. Place corn in large baking dish or pan. Cover with lukewarm water; let stand 30 minutes. Heat grill to medium direct heat. Meanwhile, blend butter, chile, adobo sauce and cilantro in small bowl. Set aside in cool place.
  2. Remove corn from water; drain. Place corn on grill. Grill, covered, 15 to 25 minutes or until tender, turning occasionally.
  3. Remove corn from grill. Cool slightly. Remove husk and silk.** Serve with chipotle butter; salt and pepper to taste.
