Ingredients

  • 1/2 cup lime juice, divided
  • 1 lb. shrimp, peeled and deveined
  • 2 ears corn, husked
  • 4 cups chopped iceberg lettuce
  • 2 cups chopped tomatoes
  • 1 can black beans, rinsed and drained
  • 2 tbsp. chopped fresh cilantro
  • 2 tbsp. chopped green onions
  • 1 1/2 cups crushed tortilla chips
  • Vinaigrette dressing, salsa or sour cream (optional)

  1. Coat grill rack with non-stick cooking spray. Preheat grill to medium (300°F to 350°F).
  2. Drizzle 1/4 cup of the lime juice over shrimp. Grill shrimp, covered, 3 to 5 minutes per side or until opaque.
  3. Grill corn 10 to 12 minutes, turning once. Cut corn from cob.
  4. Combine lettuce, tomatoes, black beans, cilantro, green onions, shrimp, corn and crushed chips on large serving platter. Drizzle with remaining 1/4 cup lime juice. Top with dressing, salsa or sour cream, if desired. Serve immediately.
