Ingredients

  • 1 clove garlic, minced
  • 1/3 cup extra-virgin olive oil
  • 1/4 cup white wine vinegar
  • 1 tbsp. Dijon mustard
  • 2 (14-oz.) jars hearts of palm, drained, sliced into 1/2-inch rounds
  • 2 (14-oz.) cans artichoke hearts, drained and quartered
  • 1 pt. container grape tomatoes, halved
  • 1/4 cup chopped fresh parsley
  • 4 cups mesclun salad greens

  1. For dressing, in a small bowl whisk together garlic, oil, vinegar, mustard, and salt and pepper to taste.
  2. In a large salad bowl combine hearts of palm, artichokes, tomatoes and parsely. Pour dressing over hearts of palm mixture; toss to coat. Cover and chill 30 minutes.
  3. Spoon hearts of palm mixture over salad greens, and serve.
