Ingredients

  • 9 slices Italian bread, cut into 1-inch cubes (about 5 cups)
  • 1/2 cup extra virgin olive oil
  • 1/2 cup red wine vinegar
  • 1/4 cup fresh lemon juice
  • 1 garlic clove, minced
  • 3 cucumbers, peeled, seeded and cut into 1/2-inch cubes
  • 1 large red onion, cut in thin wedges
  • 3 large Roma (plum) tomatoes, cut into 1/2-inch cubes

  1. Preheat oven to 300°F. Place bread cubes in a single layer in a 15x10x1-inch baking pan. Bake, uncovered, 10 to 15 minutes or until bread cubes are dry, stirring twice. Let cool; set aside.
  2. Meanwhile, for the dressing, stir together oil, vinegar, lemon juice, garlic, and salt and pepper to taste. Let stand 30 minutes at room temperature.
  3. Meanwhile, in a large serving bowl combine reserved bread cubes, cucumbers, onion and tomatoes. Drizzle with dressing; toss to coat. Serve immediately.
