- Preheat oven to 300°F. Place bread cubes in a single layer in a 15x10x1-inch baking pan. Bake, uncovered, 10 to 15 minutes or until bread cubes are dry, stirring twice. Let cool; set aside.
- Meanwhile, for the dressing, stir together oil, vinegar, lemon juice, garlic, and salt and pepper to taste. Let stand 30 minutes at room temperature.
- Meanwhile, in a large serving bowl combine reserved bread cubes, cucumbers, onion and tomatoes. Drizzle with dressing; toss to coat. Serve immediately.
