Italian Havarti Frittata

Ingredients

  • 1 tbsp. olive oil
  • 4 slices salami, chopped
  • 1/2 red bell pepper, chopped
  • 2 green onions, chopped
  • 1 garlic clove, minced
  • 6 eggs
  • 2 cups grated Havarti
  • 1 tomato, sliced
  • 1 to 2 tsp. dried oregano

  1. Preheat broiler to high. In a large ovenproof nonstick skillet heat oil over medium heat. Add salami, bell pepper, onions and garlic; sauté 2 to 3 minutes or until vegetables are tender.
  2. Beat eggs in a medium bowl; season with salt and pepper to taste. Pour over vegetables in skillet; cook 5 minutes or until eggs are set, lifting edges to let uncooked egg run underneath. Top with Havarti and tomato, and sprinkle with oregano.
  3. Place skillet in oven. Broil 4 to 5 minutes or until frittata puffs up and cheese is golden. Serve warm or cold.
