Ingredients

  • 1/4 cup chopped onion
  • 1/4 cup chopped green or red bell pepper
  • 1 tbsp. vegetable oil
  • 1 lb. cooked smoked sausage, cut into 1/2-inch slices
  • 1 (14.5-oz.) can diced tomatoes with mild green chiles
  • 1 (14-oz.) can chicken broth
  • 1 cup medium-grain white rice, uncooked
  • 1/4 tsp. black pepper

  1. Heat oil in a large skillet over medium-high heat. Add onion and bell pepper; cook 5 minutes or until vegetables are tender.
  2. Stir in sausage, tomatoes, broth, rice and pepper; bring to boiling. Reduce heat; cover and simmer 20 minutes. Remove from heat and let stand 5 minutes before serving.
