- Preheat oven to 350°F. In a large skillet heat oil over medium-high heat. Add sausage; cook and stir until browned. Using a slotted spoon, transfer sausage to a 3-quart baking dish, reserving drippings in skillet. Add bell peppers, onion and garlic to skillet; cook and stir until tender. Stir in tomatoes, wine, oregano, parsley, bay leaf, and salt and pepper to taste. Bring to boiling; reduce heat. Simmer, uncovered, 10 minutes.
- Pour tomato mixture over sausage in baking dish. Bake, covered, 30 minutes or until thickened and sausage is no longer pink (160°F). Remove and discard bay leaf. Let stand 5 minutes before serving.
