Ingredients

  • 2 lbs. hot or mild Italian sausage, cut into 2-inch pieces
  • 1 tbsp. olive oil
  • 3 small green, red and/or yellow bell peppers, cut into strips
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 (28-oz.) can crushed tomatoes with Italian herbs
  • 1/2 cup dry red wine or water
  • 1 tbsp. dried oregano
  • 1 tsp. dried parsley flakes
  • 1 bay leaf

  1. Preheat oven to 350°F. In a large skillet heat oil over medium-high heat. Add sausage; cook and stir until browned. Using a slotted spoon, transfer sausage to a 3-quart baking dish, reserving drippings in skillet. Add bell peppers, onion and garlic to skillet; cook and stir until tender. Stir in tomatoes, wine, oregano, parsley, bay leaf, and salt and pepper to taste. Bring to boiling; reduce heat. Simmer, uncovered, 10 minutes.
  2. Pour tomato mixture over sausage in baking dish. Bake, covered, 30 minutes or until thickened and sausage is no longer pink (160°F). Remove and discard bay leaf. Let stand 5 minutes before serving.
