Ingredients

  • 2 medium zucchini, trimmed, cut crosswise into 1-inch slices
  • 8 medium white mushroom caps
  • 1 medium onion, cut into wedges 1 1/2 inches wide
  • 1/2 large red bell pepper, seeded, cut into 12 pieces
  • 2 tbsp. vegetable oil
  • 1 1/2 tbsp. light soy sauce or teriyaki sauce
  • 2 tbsp. chopped fresh cilantro or parsley
  • 1 tsp. peeled, grated gingerroot

  1. In a large resealable bag combine zucchini, mushrooms, onion, bell pepper, oil, soy sauce, cilantro and parsley; toss to coat. Refrigerate 4 hours, turning occasionally.
  2. Coat grill rack with nonstick cooking spray. Preheat grill to medium-high (350°F to 400°F). Remove vegetables from marinade; reserve marinade. Alternately thread zucchini, mushrooms, onion and bell pepper on 4 (10- to 12-inch) skewers.?
  3. Place skewers on grill. Grill, covered, 8 to 10 minutes or until vegetables are tender, turning once and basting with remaining marinade. Serve hot or warm.
