- In a large resealable bag combine zucchini, mushrooms, onion, bell pepper, oil, soy sauce, cilantro and parsley; toss to coat. Refrigerate 4 hours, turning occasionally.
- Coat grill rack with nonstick cooking spray. Preheat grill to medium-high (350°F to 400°F). Remove vegetables from marinade; reserve marinade. Alternately thread zucchini, mushrooms, onion and bell pepper on 4 (10- to 12-inch) skewers.?
- Place skewers on grill. Grill, covered, 8 to 10 minutes or until vegetables are tender, turning once and basting with remaining marinade. Serve hot or warm.
