Miso-Ginger Broccoli Slaw

  • 1 pound broccoli stems, peeled and shredded
  • 2 medium carrots, grated
  • 1/4 cup white miso paste
  • 1/2 tsp. finely grated orange zest
  • juice of half an orange
  • 2 tbsp. ginger, peeled and grated
  • 2 tbsp. white rice vinegar
  • 1 tbsp. toasted sesame oil
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped

  1. Use a box grater to shred the broccoli and carrots into a large mixing bowl.
  2. In a separate bowl whisk together the miso paste, orange zest and juice, vinegar, ginger, herbs, and sesame oil for dressing.
  3. Pour over the broccoli and carrot and hand toss. Store overnight to marinate flavors.
