Orange Roughy Tacos with Chili-Lime Sauce

Ingredients

  • 2 cups finely chopped cabbage
  • 2 tsp. lime juice
  • 1 tsp. apple cider vinegar
  • 1/4 cup mayonnaise
  • 4 (4-oz.) orange roughy fillets, thawed if frozen
  • 2 tbsp. olive oil
  • 1/2 tsp. garlic powder
  • 8 (6-inch) flour tortillas
  • Bottled chili sauce
  • 2 Roma tomatoes, seeded and diced
  • 2 tbsp. chopped fresh cilantro
  • 1/2 tsp. onion powder

  1. In large bowl combine cabbage, lime juice, vinegar, mayonnaise, and salt and pepper to taste. Set aside.
  2. Preheat grill to medium (300°F to 350°F). Brush each fillet with oil and season with garlic powder, onion powder, and salt and pepper to taste.
  3. Place fillets on large sheet of heavy-duty aluminum foil. Seal tightly, place on grill, and grill 6 to 8 minutes. Meanwhile, grill both sides of tortillas.
  4. Place cabbage mixture and 1 grilled fillet in each tortilla. Top with chili sauce, tomatoes and cilantro.
